How did you meet and start CARBONISTE?

Let’s pop a red cap and get into the bottle with CARBONISTE Winemakers, Dan and Jacqueline Person. These questions go deeper and get bubbly as they share more about CARBONISTE, winemaking, and wine drinking.

How did you meet and how did you start CARBONISTE?

Ok. . . Yes notably these are two questions, but Dan and Jacqueline are a husband and wife team where work, life, and family all have to be balanced. Watch or read below how Dan and Jacqueline met and why they started CARBONISTE together.

Dan: Yeah. So Jackey and I met about a dozen years ago back in college, at UC Davis.

Jacqueline: More than that now.

Dan: Yeah. A lot long time ago. I feel like I was a child then. Now I feel like an old man.

Jacqueline: Ha, ha! No!

Dan: So we met back in college. We ended up traveling around Europe and New Zealand together. At some point, I got a job making traditional-style, champagne-style wine in sparkling wine in California. But I kind of figured out working there that you don’t try to make Bordeaux in Burgundy, so why are we trying to make Champagne in California?

It didn’t make sense to me.

So I wanted to try to make what I consider to be truly California sparkling wine. That’s where we came up with CARBONISTE. This idea of a bright, vibrant, foodie sparkling wine that is really representing the terroir of California. More so than what I think otherwise is being done on the market now.
